Imagindairy leads “No Cow”, a guilt-free dairy revolution

Israeli start-up launches animal-free, highly functional and quickly to market dairy proteins

TEL AVIV, Israel, June 9, 2021 / PRNewswire / – Good news for those looking for eco-friendly eating habits by reducing their intake of animal protein, but can’t get rid of the craving for real milk in a hot cup of coffee or resist getting indulge in a rich cheesecake. The Israeli start-up Imaginary, Ltd., is processing new technology to keep the cow out of the dairy equation. The company creates real milk proteins that cannot be distinguished from reality through a natural process of precision fermentation.

Recreate casein and whey

Imagindairy’s proprietary technology recreates nature-identical, animal-free versions of whey protein and casein that can be used to produce dairy analogues. They have the flavor and texture – and, most importantly, the functionality and nutritional value – of their animal counterparts. This opens up new opportunities to develop a full line of non-dairy products that perfectly mimic dairy versions while being cholesterol-free and GMO-free. They are also lactose free, intended for consumers suffering from lactose intolerance or sensitivity. At the same time, the proprietary technology drastically reduces the burden of dairy cattle on the environment.

“Our production method based on microflora was inspired by nature to recreate these proteins”, explains Eyal Afergan, PhD, co-founder and CEO of Imagindairy. The unique protein structure of cow’s milk is what gives it its characteristic texture, flavor and nutritional value. Whey is a key source of highly biologically available protein. Imagindairy’s animal-free dairy products offer the same complement of nutrients, from protein content to mineral composition, including calcium.

Reward the complete guilt-free dairy experience

In response to the growing awareness of animal welfare and the environmental impact of animal husbandry, supermarket shelves have become vibrant with alternative plant milk and dairy analogues. Yet in many ways, plant-based dairy alternatives fail to meet the sensory demands of consumers.

“Our vision was to provide an animal-free version of the main dairy proteins – whey and casein – that could allow product manufacturers to match real dairy products in terms of protein concentration, nutritional profile and sensory experiences. full of animal-derived animal versions, “says Afergan.” I look forward to being able to offer my children such treats as a cup of nutritious and flavorful milk or creamy yogurt without the harsh impact on animals or on the environment they must inherit. “

Teams of experts unite to bring a viable and rapid solution to the market

Imagindairy was co-founded by a multidisciplinary team of eminent experts in microbiology, computer systems and biotechnology with the support of Israelbased on The Kitchen FoodTech hub. The team, led by Dr. Arié Abo, PhD, specialist in protein biochemistry, in collaboration with Tamir tuller, PhD, professor at Tel Aviv University, to advance emerging technology to overcome production bottlenecks and create a commercially viable and guilt-free dairy product without sacrificing quality or functionality.

Imagindairy launched its operations at the height of the COVID-19 pandemic, building its first applications lab in the home kitchen of one of its employees, a single parent who needed a solution that would allow him to work on development while taking care of her home-schooled children.

Imagindairy’s unique technology is based on 15 years of research by Tuller, channeling evolutionary genomics for the advancement of high-yield protein production. “We have developed an advanced protein production platform that allows us to optimize every step of the creation of milk protein,” notes Tuller, co-founder and CSO of Imagindairy. “This allowed us to achieve the yield necessary to achieve commercial production.”

Imagindairy technology can be easily integrated into existing dairy feed production facilities. The start-up already raised US $ 1.5 million in seed funding, led by The Kitchen FoodTech hub, with contributions from the Israel Innovative Authority, CPT Capital, New Crop Capital and Entry Capital, and will soon enter its A-round funding series.
