Microsmoothies are one of the most popular products at the Irey Market Garden store.
Farm to Table by Irey Market Garden is owned and operated by Dan and Tawnie Irey. Started in 2020, they were inspired by the idea of market gardening, growing a variety of produce in a small space.
Their shop is unique because they grow all of their microgreens on site. “Microgreens are vegetable plants harvested about 10 to 14 days after planting. At this stage, they are up to 40 times richer in nutrients than their mature counterparts,” says Tawnie Irey. “All of our products contain microgreens because our goal is to improve the health and well-being of our local community.”
Customers are invited to take a short tour of the indoor farmhouse and boutique kitchen. In the kitchen, they make microgreens fresh fruit smoothies, microgreens salads, and many freeze-dried microgreens products, including smoothie mixes, candies, and trail mixes. Their farm and kitchen are dedicated to gluten-free, refined sugar-free, and vegan foods.
Freeze-dried microgreens products are a specialty that few can afford. Originally, the shop only grew vegetables, lettuce mixes and microgreens. But after much of it had gone to the chickens, they started researching how they could preserve the microgreens that weren’t selling. After the Ogden Farmers Market, they quickly found Family Freeze Dry, of Harrisville, who started helping them freeze-dry microgreens. “At first, we weren’t sure what we were going to do with it, but very quickly the ideas started flowing, which led us to where we are today,” says Irey.
The Ireys are passionate about bringing nutrient rich foods to the community of Ogden. Irey says, “We are inspired by real, sustainably grown food. We are also inspired to grow and distribute food in a way that limits our impact on the environment. The majority of our packaging is compostable, which we have done since the beginning of our journey. »
The couple were also inspired by the Ogden community, particularly the market community. “We’ve met so many great people in the various markets we participate in and we’re excited to contribute to this great community,” says Irey.
The grand opening of the store will take place on Saturday, June 11 from 4-7 p.m. and will be open house style at 196 W. 21st St., Suite B. The store will be giving out free MicroPops (vegan microgreen fruit popsicles) for people to try, as well as a BOGO deal on all smoothies and salads that will last the entire month of June. During the grand opening, they will be hosting tours of the farm so customers can see where everything is grown and made.
