Created by Chasitie and Courtney Lindsay, owners of Houston Sauce Co. and Houston Sauce Pit, the space will serve as a vegan cafe that will fuse the Lindsay’s love for music and vegan breakfast foods.

Called Mo ‘Better Brews, the cafe also serves as a vinyl and record store at 1201 Southmore Blvd. Its inauguration will take place on Saturday from 7:30 a.m. to 6 p.m. The couple teamed up with DJ Flash G. Parks, who has a large collection of vinyl records and historic music paraphernalia, such as first reported by Emma Balter at Preview.

Taking a page straight out of Spike Lee’s book, the store will have not only vegan offerings, but a vibe similar to that of the ’90s movie, “Mo Better Blues.” Mo Better Brews will be decorated with rare vinyl records which will be available for purchase. The store’s decor will also include original flyers from the 1940s and 1950s, from performances by Houston blues musicians like Lightnin ‘Hopkins.

The place will serve up some of the couples food truck favorites, as well as a few new items. Fans of their food truck will find the chik’n-fried mushrooms and vegan oatmeal, as well as the new Cajun croissant. Along with delicious breakfast toppings, the menu will feature non-breakfast options like flatbread pizzas and other small bites.

Genuinely mixing their love for music and food, the new vegan concept follows the theme right down to the names of the menu items. At the next cafe, patrons can order menu items like “Motown Monte”, “The Smokey Rob” and even “Johnny Nash”.

APPROACH TO JUNE: In honor of Juneteenth, Lucille’s 1913 will serve 2,000 meals at Emancipation Park

The store will offer a specially designed vegan infusion, a collaboration with Three Keys Coffee. Playing the name “Mo Better Blues” again, the brew is called Bleek & Indigo, the names of the main characters from Spike Lee’s original joint. Customers can order cups of coffee as well as bags of ground coffee to take away.
